Figy Newtons

FIGy NEWTONS
I absolutely love fig newtons but seeing as I don’t buy much processed food now days, I decided to make a raw vegan/vegan version. Their gluten free and yummy!



INGREDIENTS
·      Dough
·         Roughly 3 cups of oat flour gluten-free 
·         (or half oat flour and half almond flour)
·         2 Tbsp coconut oil melted
·         1/3 c agave, honey or maple syrup (or you can even use dates about 14)
·         1-2 Tbsp orange juice or lemon juice
·         1/2 tsp cinnamon
·         ¼ tsp of allspice
·         1 tsp vanilla protein powder (optional)

·         Filling
·         1 ½ c dried figs soaked in warm water for 30 minutes
·         1 Tsbp lemon or orange juice
·         1 Tbsp agave or honey or maple syrup or coconut sugar
·         ½ tsp cinnamon,allspice
·         3-4 Tbsp hot  water

·         1 tsp vanilla flavoring non alcoholic (optional)

INSTRUCTIONS

1.        Dough Blend the sweetener , orange juice, coconut oil, vanilla extract, and orange zest until  smooth.
2.        Add flour and dry ingredients.
3.        Add the sweet wet mixture.
4.        You want it to mix to form a slightly sticky ball of dough. If it is overly sticky, add 1/4 cup more oat or almond flour.
5.        Optional :Refrigerate for 30 minutes.
6.        Filling: Remove any stems from your figs and rinse off.
7.        Combine the dried figs, hot water, citrus juice, and sweetener and spices in a bowl.
8.        To assemble: Roll out the chilled cookie dough place fig mixture one side leave the other side blank, once you’re spread your fig mixture on one side, fold the dough and roll it up a little cut them lengthwise.
9.        Transfer to a baking pan lined with parchment paper.
10.     Eat as is or bake or to keep them raw vegan but a little toasted stick them in the dehydrator or your oven at a low temperature for a few minutes or just bake them for 12 minutes at 350F.
11.     Once their done enjoy!
