Roasted Chickpea Caesar Salad (Oil Free,Vegan)



Greens: 
1-2 heads of  romaine lettuce chopped

Roasted Chickpeas :(The vegan chicken)

  • 1 (15-ounce) can chickpeas (or 1 1/2 cups cooked), drained and rinsed
a low sodium bbq sauce 
  • 1/2 cup organic ketchup
  • 1-2 tablespoons apple cider vinegar
  • 1-2 tablespoon molasses
  • 1/2 teaspoon smoked paprika.
  • 1 tsp of minced garlic
  • a dash of cayenne pepper (optional)
or simply season with
  • 1/2 teaspoon garlic powder
  • 1/8 to 1/4 teaspoon cayenne pepper (optional)
  • 1/4 tsp garlic powder
  • 1/4 tsp chilli powder 
  • 1/2 paprika 
Personally I like a mix of both bbq sauce and a little seasonings, but that's just me!

Instructions
Toss the chickpeas in the bbq suace or the seasoning whichever you choose. Then roast in the oven on 350 on a nonstick pan or parchment paper for about 15-20 minutes. Toss and turn midway.

Vegan Parmesan cheese (nut-free) 
roughly 3/4 cup hemp seeds 
and 3-4 tbsp of  nutritional yeast

Instructions
Blend together until you get a crumby consistency.


Oil Free Caesar Dressing
·       2/3 cup raw cashews ( soaked overnight or a few hours in water)
·       1/4 cup water
·       1/4 cup unsweetened plant milk
·       1 tablespoon lemon juice
·       1/2 tablespoon vegan Worcestershire sauce
·       1/2 tablespoon Dijon mustard
·       1/2 teaspoon garlic powder
·       1 garlic clove
·       2 teaspoons capers
·       Salt and pepper to taste
Blend together all the ingredients, best to use a food processor. Blend until smooth add more liquid as needed.
