Roasted Chickpea Caesar Salad (Oil Free,Vegan)
Greens:
1-2 heads of romaine lettuce chopped

- 1 (15-ounce) can chickpeas (or 1 1/2 cups cooked), drained and rinsed
- 1/2 cup organic ketchup
- 1-2 tablespoons apple cider vinegar
- 1-2 tablespoon molasses
- 1/2 teaspoon smoked paprika.
- 1 tsp of minced garlic
- a dash of cayenne pepper (optional)
- 1/2 teaspoon garlic powder
- 1/8 to 1/4 teaspoon cayenne
pepper (optional)
- 1/4 tsp garlic powder
- 1/4 tsp chilli powder
- 1/2 paprika
Personally I like a mix of both bbq sauce and a little seasonings, but that's just me!
Toss the chickpeas in the bbq
suace or the seasoning whichever you choose. Then roast in the oven on 350
on a nonstick pan or parchment paper for about 15-20 minutes. Toss and
turn midway.
Vegan Parmesan cheese (nut-free)
roughly 3/4 cup hemp seeds
and 3-4 tbsp of nutritional yeast
Instructions
Blend together until you get a crumby consistency.

Oil Free Caesar Dressing

2/3 cup raw cashews ( soaked overnight or a few hours in water)
·
1/4 cup water
·
1/4 cup unsweetened plant milk
·
1 tablespoon lemon
juice
·
1/2 tablespoon vegan Worcestershire sauce
·
1/2 tablespoon Dijon mustard
·
1/2 teaspoon garlic powder
·
1 garlic clove
·
2 teaspoons capers
·
Salt and pepper to taste
