Vegan Rich Chocolate Cupcakes with Strawberry Frosting
V-Day inspired cupcakes!
Their gluten-free,dairy free,oil free friendly and delicious!!!!!
Ingredients
· For the Cake:· 1.5 cups (204g) Oat Flour (or any Gluten-Free Flour)· 1 cup (200g) Organic Brown Sugar or Raw Cane Sugar· 1/2 cup (42g) Cocoa Powder ( I used 1/4 extra dark and 1/4 regular)· 1 tsp Baking Soda· 1/4 tsp Salt· 1 cup (240ml) Soy Milk (or other non-dairy milk)· 2 tsp (10ml) Vanilla Extract· 1/2 cup (120ml) Coconut or olive oil (you can sub with applesauce too)· 1 Tbsp (15ml) Apple Cider Vinegar· (This will create a buttermilk effect!)· 1 Flax Egg· 1 tsp of cinnamon (optional, but this will enhance the chocolate flavor!)Baking Directions· Preheat the oven to 350 degrees fahrenheit (or 180 degrees celsius).· Grease cupcake pan or use cupcake tins.· Sift and mix all the dry ingredients together .· Mix your wet ingredients soy milk (or other non-dairy milk),flax egg vanilla extract, olive oil, white vinegar and applesauce and mix.· Add the flax egg( 1 Tbsp ground flaxseed meal with 3 Tbsp Hot Water and allowing to sit for a minute.)and mix in.· Combine your dry and wet ingredients. Pour the batter into cupcake pans.· Bake for 30 minutes. To make sure it's done insert a toothpick into the center of the cake. If it comes out clean it’s ready. If not, put it back in for another 5 minutes and then check again.· Move to a cooling rack and allow to cool completely before frosting.· Ingredients· ⅓ Cup Soy Milk· ⅓ Cup fresh strawberry puree· 2 Cups organic confectioners sugarInstructions4. In a bowl mix the butter and the strawberry preserve.5. Add the confectioners sugar and keep mixing until light and fluffy.Sprinkle with crushed dried strawberries if you like!- ENJOYYYYYYYYYY!!!
