Carrot Cake Vegan Pancakes (Oil,Sugar and Gluten Free)


Ingredients


  • 1/2 cup unsweetened applesauce
  • 1 1/4 cup oat flour (rolled oats ground in a blender)
  • 1/2 cup non-dairy milk
  • 1 tsp of apple cider vinegar (add this to the milk)
  • 2 tsps lemon juice
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  •  1/4 tsp allspice
  •  1/4 tsp ground cloves
  •  1/4 tsp ginger

  • (You can add nutmeg or cinnamon if you like)

  •  1/3 cup finely grated carrots

  • Optional
    Vegan Cream Cheese

    Instructions

    1. Combine all the dry  ingredients in a bowl and the wet ingredients in a bowl combine and mix together until you get a nice batter.
         2. Heat a non-stick skillet over medium-high heat.
         3. Pour about 1/3 cup of batter into the pan. Since it is quite thick, spread/smooth into a circle.
         4. Cook for 2-3 minutes on the first side. When you can easily slide a spatula under, flip. Cook  for another 2-3 minutes. Remove from pan.
         5. Repeat until all the batter is gone.
    Top with cinnamon, and vegan cream cheese if you have it and top with additional maple syrup. Enjoy!
