Vegan Spaghetti with Chunky sauce

Vegan bolognese veggie packed rich spaghetti sauce with organic noodles, topped with oregano! A win for meat lovers and vegans alike I promise!



Ingredients

1 can of chickpeas
A handful of kale
A few carrots chopped about 1 cup or 2
1 meduim sized zucchuni
1 small onion chopped
1-2 tbsp of olive oil
1 can of no salt crushed tomato sauce
2 tsp of garlic powder or minced garlic
1 tsp of paprika
1 tsp of nutritional yeast
4 tbsp of raw sugar or honey
1 tsp of oregano

optional:red pepper flakes
salt and black pepper to taste
1 box of organic pasta or veggie pasta


In a food processor pulse zucchini,carrots,chickpeas and kale until loosely chopped. Heat a skillet and add a little bit of love oil, add chopped onion and cook until soft. Add the additional veggies add seasonings and cook for a about a minute and then add the tomato sauce and the sugar let it simmer and cook on low heat until the sauce is thickened stirring occasionally. Cook you pasta as directed on the box. Serve topped with oregano black pepper and a little nutritional yeast. Enjoy!
