Vegan Chocolate Chip Pancakes (Oil free,Sugar-Free,Gluten Free)

INGREDIENTS

  • 2 cups oat flour (ground up oats)
  • a pinch of  sea salt
  • 1 tsp baking powder
  • 1/2 tsp cinnamon and allspice
  • 1-2 tbsp of raw sugar or honey
  • 1 cup  plant based milk (almond,coconut, etc)
  • 3/4 cup non dairy yogurt (flavor in raspberry adds an extra kick!)
  • 1 tsp vanilla extract or vanilla protein powder
  • 1/3 cup dairy free chocolate chips 
  • coconut oil for pan

INSTRUCTIONS

  1. In a large bowl combine oat flour, baking powder, sea salt and cinnamon.
  2. In a separate bowl combine yogurt, almond milk,  vanilla extract and 1 T maple syrup.
  3. Add wet ingredients to dry and stir to combine.
  4. Stir in chocolate chips.
  5. If batter is too thick add in a bit more  milk or water.
  6. Spray or melt coconut oil in a large pan over medium heat.
  7. Add a 1/3 cup of batter to form pancakes.
  8. Cook until all bubbles have popped (about 3 mins) & flip over for 1 min. Repeat until all batter is used.
  9. Serve warm with maple syrup, bananas or whatever you like.
