Gluten Free Vegan Chow Mein (Oil Free Friendly)

Ingredients

8 ounces of brown rice noodles
1 bag of frozen organic stir fry veggies
2 cups of shredded cabbage
Trader Joes Brown rice noodles
2-3 TBSP of Tapioca starch or cornstarch
1-2 cups of meat substitute or cauliflower Quorn or Tofu
2-3 tbsp Hoisin Sauce
1/2 cup Low Sodium Veggie Broth
1-3 tsps poultry seasoning
1 Tbsp nutritional yeast (optional)
a pinch or two cayenne pepper
1 tsp Curry powder
1/2 tsp cumin
1/3 cup of chopped green peppers  (1/2 of small pepper
1/3 cup of chopped onions (1/2 of small onion)

Bring a pot of water to a boil and cook the noodles according to the package directions. Drain and set aside.
Heat a skillet over medium-high heat and add water or oil. Add the meat substitute tossed in cornstarch, add additional  seasonings, onions, green peppers cabbage and onions and cook for a few minutes until onions have softened . Add the additional starch, broth, soy sauce and veggies and cook for a minute or two then toss in the noodles. Top with more  poultry seasoning and salt and pepper as desired.
